keep it raw with this almond, pistachio and ginger muesli

"Sweetened only by apple juice this is one if the easiest and most nutritious ways to start your morning. I usually make a bunch of it up and keep it in the fridge to eat all week. Best topped with in season fruits like berries or stone fruits in the summer and pears or apples in the winter. You can also switch out the apple juice with one of these homemade nut milks. Delish!"
I N G R E D I E N T S: (makes about 6 servings)
1 cup (gluten free) oats
1/2 cup chia seeds
1/2 cup hemp seeds
1/2 cup shredded coconut
1/2 cup almonds, roughly chopped
1/2 cup pistachios, roughly chopped
3 - 4 cups orange or apple juice: NOT FROM CONCENTRATE. The label should say something along the lines of 'juice from ripe, whole, organic apples/oranges" and nothing else!
a few pinches of grated or ground ginger (i like ginger so i add quite a lot)
- Throw everything but the juice into a bowl and mix together
- Then add the juice and mix thoroughly. The ingredients should all be covered with a tiny bit of extra liquid that will be absorbed overnight so if it's still looking a little dry, add a bit more juice.
- Keep in the fridge overnight and in the morning serve cold with fresh, in season fruit.
