"I LOVE the tropics so i find it pretty tough living in the north east of America, especially at this time of year. Sadly things like mangos and limes will never be local in New York state but thank god for Florida being relatively close! I add lots of lime juice to this recipe but play around with the ingredients and see what suits your taste buds. I also think the mango is sweet enough but if you wanted to add a date or 2, or a little honey that works too."


INGREDIENTS: (serves 2)

1/4 cup chia seeds

1/4 cup water

1/2 cup coconut milk 

juice of 1/2-1 lime + zest

1 cup fresh or frozen mango


  1. Mix the chia seeds and water together until they form a gel like consistency.
  2. Throw it and the rest ingredients into a food processor until smooth. 
  3. Pour mixture evenly into 2 jars and then to the fridge for a few hours to set.
  4. When ready, serve with shredded coconut, mango pieces, hemp seeds, fresh mint and a squeeze of lime juice
