coconut and pear bircher muesli with grated apple and crushed pistachios

"This has been a favorite breakfast of mine forEVER. It is incredibly easy to make and a really great way to start your morning. My husband gets up super early for work so isn't really a brekkie eater but i make a bunch of this up for the week and leave containers in the fridge for him to grab on his way out. And guess what? He loves it!
You can play around with the recipe a little and add spices like ginger or cinnamon, even cardamom would be great. You can also use apple or orange juice instead of the pear. Just make sure it is 100% juice and not from concentrate. Beware of nasty additives when buying juice too. The only ingredient should be fruit!"
INGREDIENTS: (serves 2)
1 cup oats (or muesli if you prefer a bit more texture)
1 cup juice - apple, orange or pear
1/2 cup fresh almond milk (homemade is always better) or coconut milk
1/2 apple, grated
handful pistachios, crushed
MAKE: In a medium sized bowl or container cover oats evenly with juice and milk. Leave to soak overnight in the fridge. In the morning top with grated apple, crushed pistachios and a drizzle of honey. Double the mixture (sans apple and pistachios) and leave it in the fridge to eat all week. SUPER easy!
