orange and macadamia balls with turmeric and cayenne pepper

"I have been making these balls as a snack for years so recently i decided to play around with them a little by adding a pinch of turmeric and cayenne pepper. I also adjusted how i sweetened them by subtracting the amount of dates that i used and switching them out for orange juice. I tested the recipe at a recent Treehouse Retreat and they were a hit! So i've updated the recipe below... Of course if you don't like turmeric or cayenne pepper then just leave those additions out. They are incredibly delicious either way!"
I N G R E D I E N T S: (makes about 8-10 balls)
1/2 cup macadamias
1/2 cup cashews
1/2 cup shredded coconut + extra for rolling
2 pitted medjool dates
zest of 1 orange
juice of 1 orange
1/2 tsp vanilla extract
1 tbsp coconut oil
1 tsp turmeric
1 tsp cayenne pepper
- Throw all ingredients into a food processor and process until soft and wet (enough so that they will stick together when rolled. You may need to add a little more coconut oil if you think it's too dry)
- Sprinkle about 1/4 of a cup of the shredded coconut (you can add more as you need it) on a flat surface (i generally just use a chopping board) and then one by one scoop a big tablespoon of the orange mixture into your hands, rolling into a ball and then through the coconut.
- Transfer to the fridge and try not to eat them all at once!
